TASTING PROFILE AROMAS After uncorking, it opens with floral notes of rose petals and violets, followed by cedar and mocha. This is soon followed by the scents of sandalwood, cinnamon and nutmeg. After airing it finishes with plum notes and hints of dark cherry and blueberry. FLAVORS This is an elegant wine, while lighter in style compared to the Six Gun Syrah its aromatics are dreamy yet powerful and is full of silky tannins with a velvety finish. The wine opens with the flavors of cherry and cinnamon against a sweet oak component followed by cedar, chocolate and blueberry, which combine to form a silky mid palate, followed by a long rose water flavored finish. This wine is delicately balanced with just enough tannin so that it will improve with additional cellaring and will to continue to improve for several years after that while maintaining aromatic perfection.
While our Central Coast Syrahs are designed to blend flavors from cool climate regions, the ‘Winner’s Circle’ Flavor Profile Syrahs are designed to show how artful blending can influence Syrah and create distinctive flavor profiles. These wines are harvested by winemaker direction, destemmed without crushing to fermenters, punched down to extract tannin and fermented with natural yeasts. The wines are pressed using a small basket press, then racked to French oak barrels to create a distinctive flavor profile. Aging, finning, and racking is lot specific with the final cuvee assembled 24 months after harvest.
