TASTING PROFILE AROMAS It opens with the aroma of saddle leather, cedar and a dusty earthiness enhanced by brooding dark jam-like fruit. This is followed by smoky scents and spices. After airing it finishes with white chocolate, dried fruit and hints of perfume. FLAVORS This is an earthy, European style wine that is full bodied yet supple on the palate with a velvety finish. The wine opens with the flavors of leather and game against a smoky oak backdrop followed by cedar notes and dark fruit. The resulting combination forms a long mid palate and lingering finish.
Our central coast Reserve Syrah is designed to blend flavors from over 20 vineyards in the cooler climate AVA’s of the Central Coast. However, the Winner’s Circle Flavor Profile Syrahs are designed to show what proper vineyard selection, wine making techniques, and artful blending can accomplish by creating distinctive flavor profiles. These wines are harvested by winemaker direction and fermented using a variety of regimes to create a “spice rack” of wines. The resultant wines are then barreled in French oak that has been selected to enhance specific flavors, thus creating distinctive wine styles. Ultimately, the aging, finning, and racking of these wines is lot specific with the final cuvee assembled between 18 and 24 months after harvest. The most old world in style of all of the flavor profile wines, these are earthy, full bodied and grand.
