AROMAS: After uncorking, it opens with a smokiness that is soon followed by the scents of cedar, dark fruit and white pepper. After airing it finishes with dried fruit notes and hints of cocoa powder. FLAVORS: This is a rustic wine masculine in style that is full of powerful tannins with a velvety finish. The wine opens with the flavors of leather and a hint of bacon against a smoky oak backdrop. This is followed by notes of cedar combining to form a long mid palate. This wine is delicately balanced with just enough acid to complement the hearty tannins so that it will improve with additional cellaring and will continue to improve for a decade after that.
These wines are harvested by winemaker direction, fermented using a variety of regimes to create a “spice rack” of wines. The resultant wines are then racked to a mixture of French oak barrels that have been selected to enhance specific flavors creating distinctive wine styles. Then the aging, finning, and racking of these wines is lot specific with the final cuvee assembled between 18 and 24 months after harvest. The “Six Gun” style is rough and ready with smoke, flint and leather with a masculine tannin profile.
